Recipe: Turmeric caramel pork belly

Ingredients for caramel (GF)

  • 250g palm sugar
  • 2 tbsp fish sauce
  • 5 tbsp lime juice
  • 1 stick lemongrass
  • 3 kaffir lime leaves
  • 1 tablespoon crushed ginger
  • 3 tbsp water
  • 1 tbsp turmeric paste

Place all ingredients in a small pot and boil for 6 minutes on high. Remove from heat and strain out all the lemongrass and lime leaves. Put sauce aside.

Take 500g cooked pork belly and cut into cubes. Cook these cubes over a flat grill or frying pan until crispy and well browned.

Place them into a bowl once hot and spoon over as much of the caramel as you like. Place onto a plate and garnish with sesame seeds, sliced red chilli and spring onion.
